Stuffed Pumpkin

Cut off top of Sugar Pumpkin and clean out seeds

Cube about ¼ lb of stale bread (leave out on counter overnight after cutting)
Cube about ¼ lb of cheese – Asiago, Cheddar, Blue, Gorgonzola, Parm……….
Dice apple
1 T Thyme
Chives
3 cloves of garlic & Salt & Pepper
½ c cream
Nutmeg, freshly grated
(Sautéed Mushrooms, Dried Fruit??)

1.        Toss together and spoon lightly into pumpkin – do not pack it in!
2.        Pour over stuffing -  ½ c cream with freshly grated nutmeg
3.        Bake 350 about 1 ½ hours – remove top after first hour for browning.
4.        Present – Cut into fourths ??        Serve with extra stuffing

**Last time my mother made it, she didn’t put in any cheese………..lots of sautéed mushrooms, onion, some
rehydrated/chopped up craisins (dried cranberries), dried apple (because that’s what  she had) some fresh cooked
cranberries & some chopped walnuts**

** You can do this with Acorn Squash or Butternut Squash.  Cut it in half and scoop out a little extra of the squash - use
the flesh you remove in soup or risotto or something**
