Sweet and Sour Red Cabbage Recipe

Ingredients

1/4 cup (1/2 stick) butter
1 2-pound red cabbage, thinly sliced (about 12 cups)
6 Tbsp sugar
2/3 cup balsamic vinegar
Method

Melt the butter in a large pot over medium heat. Add cabbage and sauté until slightly wilted, about 5
minutes. Add sugar, toss to coat evenly. Add vinegar. Reduce heat to medium-low; cover, simmer until
cabbage is tender, stirring often, about 30 minutes. Season to taste with salt and pepper.

Serves 6-8.


Red Cabbage with Apples

Cook Time: 1 hour
Ingredients:

* 1 medium head red cabbage, washed and shredded
* 1 large tart apple, peeled, cored, and sliced
* 2 tablespoons butter
* 1 bay leaf
* salt and pepper
* 1/4 cup dry white wine
* 2 tablespoons vinegar
* 1 teaspoon sugar

Preparation:
In a Dutch oven or large deep skillet, melt butter; add cabbage and apple slices, mixing well. Add bay leaf
and salt and pepper to taste.  Cover and cook over low heat for about 10 minutes. Add wine, vinegar and
sugar; stir to mix well. Cover and cook for about 45 minutes to 1 hour. Taste and adjust seasonings.
Serves 4 to 6.

Braised Red Cabbage

Ingredients:

* 1 medium red cabbage, about 2 pounds
* 2 tablespoons butter
* 1/4 cup water
* 1/4 cup red wine vinegar
* 1 apple
* 1/4 cup red currant jelly
* 1/2 teaspoon salt
* 1 tablespoon caraway seeds, optional
* 1/4 cup raisins, optional

Preparation:
Quarter the cabbage and cut out the core, then cut quarters crosswise into slices about 1/8-inch thick.
Melt butter in a large skillet over medium-low heat. Add cabbage, water and vinegar. Cover and cook for
about 15 to 20 minutes, stirring occasionally.
Add the apple slices, currant jelly, salt, and caraway seeds or raisins if used. Stir well; heat uncovered
about 2 more minutes.
Serves 8.
